Breakfast cups

Your kids will love these scrumptious breakfast cups packed with protein, fibre and B vitamins. Ideal for breakfast or a quick snack on the run.

 

12 slices wholegrain bread

300g tin low-sodium baked beans

1/4 cup grated low-fat cheese

2 eggs

1/2 cup low-fat milk

 

Preheat oven to 200oC (400OF/Gas 6). Lightly grease a 12-hole muffin tray with olive oil.

Cut crusts off bread and place one slice in each hole, pressing down into hole.

Spoon baked beans into each cup.

Whisk eggs and milk together in a small bowl. Pour mixture over each cup.

Sprinkle each cup with cheese and cook for 25 minutes, or until bread is crisp and filling is set and golden brown.

Makes 12.
