Chicken, brown rice, almond and citrus salad

This delicious summer salad is quick and easy to whip up for your family. Rich in protein, complex carbs, fibre, calcium and healthy fats, this salad is a complete and balanced meal. Great for picnics and BBQ's. 

Ingredients:

200 g grilled organic chicken breast (without the skin)

1 cup cooked brown rice

1 orange, cut into slices (keep any juice)

Handful fresh mint, finely chopped

Handful rocket

Handful raw almonds

3 dried apricots, finely sliced

1 Tbsp flaxseed oil

 

Method:

Put all first 6 ingredients into salad bowl and gently toss.

Combine flaxseed oil with left over orange juice and drizzle over salad once served.
