Spanish Omelette
Ingredients:
1 tablespoon oil
1 medium onion, sliced
2 potatoes, peeled and sliced
1 cup broccoli
14 red capsicum, sliced
3 eggs
Salt and pepper
Method:
1. Heat the oil in a pan. Add the onion, potato, broccoli and capsicum.
2. Fry gently and then leave covered to cook for a further 15 minutes.
3. Beat the eggs and season.
4. Remove the pan from the heat and spoon the veges into the eggs.
5. Wipe out the pan and add a little more oil.
6. Pour in the egg and vegetable mixture and cook for five minutes.
7. Turn onto a plate and cut into triangles.
