Wholemeal Pasta with Tomato and Broccoli
Ingredients:
500g wholemeal pasta
2 cups broccoli florets
2 tablespoons oil
2 cloves garlic
4 tomatoes chopped
1 tablespoon pine nuts
2 tablespoons raisins
1 tablespoon chopped parsley
Method:
1. Cook pasta in plenty of water.
2. Lightly steam broccoli until tender.
3. Heat oil in pan and gently fry the garlic for 1 – 2 minutes.
4. Add tomatoes and simmer for five minutes.
5. Toss in pine nuts and raisins.
6. just before serving add the broccoli and parsley.
7. Heat well and serve over drained pasta.
Cauliflower, asparagus or zucchini pieces can also be added.
