This scrumptious winter dessert is a great way of increasing your child’s fruit and fibre intake. Delicious served with homemade custard and ice cream, or a spoonful of yoghurt. 8 pear halves, diced (fresh or tinned in natural juice) 1 cup (150 g/51/4 oz) mixed berries 1 teaspoon cinnamon 1 cup (100 g/131/2 oz) rolled oats 1/2 cup (80 g/23/4 oz) coconut flakes 1/2 cup (86 g/3 oz) almond flakes 1/4 cup (40 g/ 11/2 oz) sunflower seeds 1 tablespoon light olive oil 2 tablespoons raw organic honey Preheat oven to 190oC (375oF/Gas 5). Lightly spray individual ovenproof dishes with olive oil. Combine fruit together in a bowl and spoon some mixed fruit into each dish. In a separate bowl mix oats, almonds, sunflower seeds, coconut flakes, flour and cinnamon. Whisk oil and honey together in a small bowl. Using your fingers mix honey and oil into oat mixture, until mixture has a crumbed consistency. Top fruit with crumble and bake for 30-40 minutes, until golden brown. Serve hot with custard. Serves 4.
